The 2015 Riesling Stettener Stein GG is dense and very complex on the mineral nose though discreet in delivering any fruit aromas in the first few minutes. However, the nose clearly reflects the shale limestone terroir of this spectacular cru north of Würzburg. Full-bodied, fresh and very elegant, this is a complex, concentrated, very mineral and firmly structured Riesling with great expression and vitality. The wine is intense and powerful but not broad or alcoholic at all. The salt of wet stones remains on the palate and this has really lovely phenolic grip. This is excellent Riesling (well, rather Stettener Stein than Riesling) in a distinctive Franconian style: structure instead of just fruit! A great wine with food! The wine was fermented in concrete eggs and stainless steel (50/50) and bottled from the full lees in July 2016.

Sandra and Ludwig Knoll are very proud not just of their Weingut—located in the famous Würzburger Stein, this is one of the most stylish ones in all Germany—but also of their new winery named "Steinkeller" that was ready just before the 2015 harvest. With the 2015 vintage, Knoll and his team pushed their idea of pure yet complex, firmly structured and tension-filled wines even further. All the village and single vineyard wines, as well as the old vines selections Vinz, were fermented spontaneously and kept on the full less until July or August. The pH levels were low, so the wines were pretty stable and no lees stirring was necessary. There was also no malolactic fermentation "to avoid any opulence." The wines are fermented in stainless steel tanks, concrete eggs and amphorae (with whole bunches). "The structure of the parts fermented with whole bunches, which we used to blend with the other components, helped us to keep the wines fresh and tight even in a vintage like 2015 that tends to rich and opulent wines," says Dominik Diefenbach. Thanks to the many old vines, especially in the Stettener Stein (which are up to 70 years old), there were no problems with drought in 2015. Even the ripest and sweetest grapes with 90 to 95° Oechsle were picked with stunning acidity levels from up to 11 grams per liter! In fact, Knoll's 2015s, at least the wines I have tasted, are fresh, lean, elegant and very digestible but also complex and well structured. They all drink beautifully today, but the finest will benefit from a longer bottle aging.
